Miserable Weekend

Well, sorry to say, this was a rather miserable weekend.

Friday I was throwing up all day. MJ also threw up a few times, but he usually bounces back very quickly, like, say, about 5 minutes. (!)

Saturday was a little better, but I felt worse on Sunday. Needless to say, we skipped church. (MJ was quite disappointed.) Today, so far I am feeling better, but still tired and a bit queasy.

Oh! I forgot to mention! M got a work computer last week. So Friday I was able to get the laptop back.

While I was feeling a bit better this weekend, I made some biscuits. They were pretty tasty. Here’s the recipe:

Yogurt Biscuits
1 c + 2 Tbls all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 Tbls cold butter
1/2 c plain nonfat yogurt
1 tsp sugar

In a bowl, combine flour, baking powder, salt & baking soda. Cut in butter until crumbly. Combine yogurt and sugar, stir into the dry ingredients just until moistened. Turn onto a floured surface and knead 4-5 times. Place on a baking sheet that has been sprayed with non-stick spray; pat into a 6″x4″ rectangle. Cut into 6 square biscuits (do not separate biscuits). Bake at 450* for 12-15 minutes  or until golden. Serve warm.


That’s the directions. I didn’t follow them exactly, now that I look at it. They looked perfect in the oven, and I turned the oven off while I went to do something else for a minute. When I came back they were a little darker golden color. Which ended up tasting really good because they were slightly almost crunchy on the outside, and tender on the inside. I don’t know if that was because of the extra time in the oven or if this recipe just works that way.

Well, I’m going to go rest for awhile on the couch now.
